Take the enchilada sauce and whisk in the sour cream.
Pour a thin layer and a 9x12 pyrex baking pan.
Mix in onions and cilantro with chickena.
Take tortilla and place a small amount of chicken and mexican cheese then fold and place seam side down in pan. Have someone hold in place as you continue,then keep rolling. You should have 8 one way then 4 the other way to fit them all. Then pour remaining green sauce all over tortillas. Sprinkle remaining cheese on top. Sprinkle Olives and cotijo cheese as well. Bake at 350 degree oven for 20 minutes.
