  1. In a 2 quart glass dish combine sugar, corn syrup and water.
  2. Cook uncovered in microwave oven for 5 1/2 minutes on High or until sugar is dissolved.
  3. Stir nuts into hot syrup and stir until well blended.
  4. Cook uncovered in microwave to hard-crack stage or 8 minutes stirring twice during cooking time.
  5. Stir butter or margarine into mixture and cook on High for 9 minutes stirring twice during cooking time.
  6. Remove from microwave and stir baking soda and vanilla into nuts and mix well.
  7. Pour mixture onto a large lightly buttered baking sheet and spread out the mixture as thin as possible.
  8. Place cookie sheet in the fridge or freezer to harden and set the Brittle.
  9. When completely cooled, remove from cookie sheet and break into pieces and remember to store your Nut Brittle in a tightly covered container.
  10. This recipe makes around 2 pounds of Brittle.
