  1. Preheat oven to 250.
  2. Pop popcorn according to package directions. Spread out on a greased sheet pan and remove all unpopped seeds.
  3. In a saucepan, combine butter, cake mix, sugar, corn syrup and salt. Bring to a boil. Boil 5 minutes, stirring constantly. Add vanilla and stirr to combine.
  4. Pour butter mixture over popcorn and stir to coat. Bake for 1 hour, stirring every 15 minutes.
  5. Add sprinkles as popcorn comes out of oven final time. Stir to combine. Let cool 1 hour before serving.

This was a good snack! However, if you're looking for a clear taste of cake batter you might be disappointed. Basically this tastes like caramel corn with just a touch of cake batter.

I'm not a sweets fan but this is tasty. A little time consuming with the stirring every 15 minutes, but worth it. I made this as a gift and it was a hit.
