  1. In skillet, over medium heat, melt butter. Add apples and 1/4 tsp. nutmeg and cook until apples begin to brown, about 5 minutes.
  2. Add 2 TBS water and granulated sugar, stir to coat apples.
  3. Cook until fruit is tender about 5 min, then set aside.
  4. Heat griddle and heat oven to 350 degrees
  5. Fit a baking pan with a wire rack, set aside.
  6. Make a 2-inch slit into each bread slice to create a pocket. Stuff about 3 TBS of apple mixture into each bread pocket, press to close.
  7. In large, shallow bowl, whisk together eggs, milk and cinnamon and remaining nutmeg.
  8. Brush griddle with butter. Dip bread slices into egg mixture, cook until golden, about 2 min. per side.
  9. Transfer to prepared baking pan, bake batch until heated through, 12-15 minutes. Sprinkle with confectionery sugar.
