Rita's Roasted Peach Salsa


"This recipe is a little different- in a good way! :) I was experimenting in my kitchen and thought it was good enough to share! It's super easy to make and is just as easy to modify. I purposely omitted the broiler temperature, as broiling is done to taste."

  1. Place peaches, tomatoes, white onion, red bell pepper, and yellow bell pepper (even the garlic if you wish) on baking sheet and stick in broiler until tender and the tomato skins can be peeled off.
  2. Out of the oven, dice the broiled ingredients and transfer them to a bowl. Add the parsley, garlic, lemon juice, and sugar. Let refrigerate for at least an hour before serving.
