Cheesy Chicken and Potato soup

  1. 1.) Take cubed chicken and place in greased frying pan with 1 diced garlic clove. (You may season chicken to taste) Let cook occasionally stirring.
  2. 2.) Take potatoes, celery, onion, chicken broth, 1/4 cup cheddar, salt and 2 cloves diced garlic and bring to a boil. Add fully cooked chicken. Reduce heat and let simmer until potatoes are just tender; add milk.
  3. 3.) 2.In a small mixing bowl, blend butter, flour, parsley, and pepper; stir into potato mixture. Cook and stir over medium heat until thickened. A thin film may appear on the surface, just stir.
  4. 4.) Remove from heat: add remainder of cheddar and stir until cheese is almost melted. Let soup stand for 5 minutes.
