  1. Saute mushrooms, peppers and onion in butter until liquid from veggies evaporates. Add rice and saute until chalky.
  2. Add seasonings
  3. Add broth and bring to a boil. Cover, lower heat and simmer for 40-45 min until rice is done.
  4. Meanwhile toast almonds in dry fry pan.
  5. Stir spinach into rice until wilted
  6. Serve topped with almonds and green onions.
