  1. 1. If making pie crust from scratch, mix 1 tsp dried thyme into dough. If you are using a store-bought crust and don't feel like messing up the circle, omit the 1 tsp thyme and use crust as is.
  2. 2. On a floured surface, roll top and bottom crust into 2 circles. Place one round in a pie plate.
  3. 3. Mix cream cheese, sour cream, salt, pepper, 1 1/2 tsp thyme, basil, and garlic together.
  4. 4. Fold in DRAINED spinach.
  5. 5. Pour mixture into pie plate.
  6. 6. Beat egg and water together.
  7. 7. Brush edges of pastry with egg mixture. Place 2nd crust on top and seal, fluting edges as necessary.
  8. 8. With a knife, create 2-3 steam vents in top crust.
  9. 9. Brush with remaining egg mixture.
  10. 10. Bake at 425 degrees for 20-25 minutes or until golden.
