  1. In a 10in non-stick skillet, use enough olive oil to cover the bottom of the skillet by 1/4-1/2in and heat over med/high heat.
  2. While oil is heating, rinse off the potatoes under cold water, and cut potatoes into small, approx. 3/4in, cubes. When oil is hot, put cubed potatoes in skillet.
  3. Be sure the cubes are spread out evenly over bottom of skillet. allow to sit for at least 5-8min. Using a spatula, Turn potato cubes about once every 5-8min. The potatoes should begin to brown evenly.
  4. While potatoes are cooking, cut onion into 2-3 slices, then cut rings in half. Separate the layers so you have a handful of 1/2 circle onion layers.
  5. When potatoes reach your desired level of golden brown, add your onion. Stir with the onions about every 2min for about another 5-8min to slightly cook the onion.
  6. Carefully remove from oil and place on a paper towel covered plate, allow to cool for 2-5min and serve as a side with your favorite breakfast!
