Marinated Tilapia with Black Bean Tapenade

  1. Place tilapia filets in a tin foil lined baking dish that allows the filets to lay independently flat. Sprinkle sea salt and white pepper over the fish filets.
  2. Combine in a separate bowl all fish marinade ingredients and stir well. Then pour marinade evenly across the fish filets, cover baking dish and place in refrigerator to marinade for a minimum of 1 hour, marinade longer for fuller flavor.
  3. After fish has marinaded, uncover the fish and place in a 375 degree preheated oven to bake for 20 - 25 minutes or till fish flakes nicely.
  4. In a non-stick pan, sauté zucchini and onions until golden brown (I utilize non-stick olive oil cooking spray in the bottom of the pan, you can also use olive oil if you prefer). Combine this mixture in a separate stove top pan with all remaining tapenade ingredients and let simmer on a low heat covered for a minimum of 10 minutes as you want the flavors to fully integrate.
  5. Serve the fish accompanied by the black bean tapenade which you will serve utilizing a draining spoon.
