Seafood Fried Rice

"This is such a yummy recipe!!!!! Everyone will love it. This recipe makes a lot. But it is great as leftovers too. Don't worry, it gets eaten fast. My personal favorite is to make this recipe with is crab meat. But it is also great with any cooked seafood. Or a great way to use up seafood leftovers."

  1. 1) Prepare rice as per it's instructions. When rice is cooked, put in a bowl, fluff with a fork, cover, and chill in the refrigerator for at least 2 hours. *Prepare steps 2-4 while waiting for the rice to chill so that it is all ready to go*
  2. 2) Be sure the seafood is cooked and then cut or flaked into very small pieces. Put aside.
  3. 3) Prepare veggies by cubing or chopping the squash or zucchini, green pepper, jalapenos, banana peppers, snow peas, baby corn, and baby carrots. Put is separate dish and put aside.
  4. 4) Prepare chopped yellow onion, chopped scallions, and sliced mushrooms. Put this in a separate dish and put aside.
  5. 5) When rice is done chilling, get a VERY large skillet and begin heating 1 cup of the olive oil, and the soy sauce over medium heat. When it gets hot, add the chilled rice and mix thoroughly and quite often.
  6. 6) While the rice is frying, in a separate bowl, beat the eggs (milk optional). In a medium sized skillet, scramble the eggs. When eggs are cooked, add to the rice mixture, along with the seafood, vinegar, and Old Bay. Mix well.
  7. 7) Now use the same medium skillet to saute the onions, mushrooms, and scallions. Saute these veggies with the butter, salt, pepper, sugar, A1, and worcestershire, to taste.
  8. When these finish sauteing, about 10min, add to rice mixture. Mix well.
  9. 8) Then add your last veggie mixture to the rice mixture, and once again, mix well. At this point, if your rice mixture seems dry, start adding the second cup of olive oil and/or more soy sauce.
  10. 9) Cover and allow to cook over medium heat for 10-15min, stirring occasionally. In the last 2-3min, add the bean sprouts.
  11. 10) ENJOY!!!!
