  1. In a large saucepan, cover the pork with cold water. Cover and bring to a boil. Lower heat and simmer for 25 minutes. Drain into a colander and rinse with cold water.
  2. In a 4-5 qt dutch oven, heat 4 Tbsp oil(any) and saute onion, carrots and celery for 8-10 minutes until soft. Add Split peas, pork and broth and bring to a boil.
  3. Lower heat and cover. Simmer for 1 hour.
  4. Remove pork and let cool. When cool enough to handle, remove and finely dice the meat.
  5. Using an immersion blender, or in batches in the food processor or blender, blend soup until smooth.
  6. Add the chopped meat and cream and heat through.
  7. Serve hot, topped with garlic croutons, if desired.
