  1. Boil water in large pot, then add sugar and salt until dissolved. Add rest of ingredients, stir. Take off burner, let cool completely before adding chicken. (you may add ice cubes if you wish) Once cooled, pour over chicken and put in refridgerator for no more than 10 hours. Once you are done brining, remove chicken, rinse under water for about 30 seconds and pat dry. Prepare chicken as you wish (roasting, grilling, etc)

My family really enjoy when I use this brine, then roast the chicken in a 350 deg oven. Cook for about 25-30 min per pound. I also rub my skin with butter to make it crispy.
