  1. PREHEAT OVEN TO 350
  2. In an ovenproof skillet, heat everything except the sprigs and chops over medium high heat in the oil for about three minutes. Transfer to a bowl.
  3. Season the chops with salt and pepper and transfer to skillet with more oil.
  4. Cook 5 minutes on one side, turn and place sprigs on chops and cook another five minutes.
  5. Add plums and onions to skillet, surround the chops and transfer to the oven.
  6. Roast for 10 minutes, depending on thickness of chops. Slice when finished and serve with juices.
