  1. 1. Use cooking spray to spray a large empty bowl
  2. 2. Mix all ingredients of dough in food processor or by hand until the dough is ready. (until dough makes a good even ball)
  3. 3. Put ball in oiled bowl and add about one tablespoon of water and spread the on the top of the dough until all of it is slightly wet. this steo helps the dough expand.
  4. 4. cover the bowl with plastic wrap and set aside until dough rises. (30-60 min)
  5. 5. Cut up 3 small onions. Place them in a bowl and add 2 teaspoons of salt to them. let stand for about 30 minutes
  6. 6. ring out water from onions with a towel or by hand with a strainer.
  7. 7. ring out water from spinach with towel or by hand with a strainer.
  8. 8. in a bowl combine all ingredients of filling.
  9. Now assemble to make pies
  10. 1. divide dough into small balls.
  11. 2. Using palm flatten the dough.
  12. 3. add 1 tablespoon of filling (or as much as desired)
  13. 4. fold dough in the form of a triangle.
  14. 5. once completed brush with olive oil or egg wash.
  15. Don't let dough sit to long once pies are filled otherwise they will open in the baking process
  16. Bake 400 degrees for 10 min. rotate. bake an additional 5 minutes or until dough becomes golden.
  17. Ovens vary. so make sure you are observant during the first batch.
