  1. Preheat oven to 350, coat 9x5 loaf pan with nonstick spray.
  2. gently spoon flour into measuring cups, do not pack. Add flour to large bowl, followed by sugar, baking powder, soda, salt and nutmeg. Stir well with wire whisk.
  3. in another bowl, combine the zuke, oil, egg and egg white, vanilla, lemon zest and yoghurt
  4. add zuke mix to flour mix, combining till just moist. Pour into loaf pan, and bake for 55 minutes, or until tooth pick inserted in middle comes out clean
