Cathy's Stuffed Banana Peppers


"Banana peppers stuffed with sausage and cheese. This recipe makes a LOT. If I don't want to make a couple pans worth, I will freeze the extra meat mixture for next time and cut down on the amount of sauce and number of peppers. But usually when I make these, I have to make a LOT. Enjoy. :) My husband says these are THE BEST he's ever had - anywhere. :) Can be a main dish or a side dish for a party."

Original recipe yields 25 servings

  1. Wash, remove tops and core the peppers (remove all seeds).
  2. Preheat oven to 350.
  3. Sautee minced onions and garlic in EVOO.
  4. Add crushed tomatoes, tomato sauce, basil, oregano, salt, pepper. Simmer 10-15 minutes. Remove from heat to cool.
  5. Mix rest of ingredients with 1 cup of sauce and 1/2 cup of mozzarella for stuffing into peppers. (Mixture is sticky.)
  6. Stuff peppers with meat mixture and lay in a baking dish. (Do not layer, just squeeze tightly side-by-side. Can usually fit into 2 large baking dishes.)
  7. Pour remaining sauce over stuffed peppers. Sprinkle with rest of mozzarella.
  8. Bake for one hour.
