  1. preheat oven to 365.
  2. in a large skillet, brown the sausage
  3. Add the onions and peppers. cook until translucent (10 mins)
  4. add tomato, sundried tomatoes, rice, and water. bring to a boil and cover
  5. continue to boil and stir occasionally until almost all the water is absorbed by the rice
  6. take sausage mixture off of the heat. mix in the basil, parsley, and oregano
  7. Line up zucchinis on a baking sheet. Fill each with the sausage mixture until slightly mounded
  8. bake for 20 minutes
  9. Top with mozzarella and bake an additional 10 minutes until golden
