  1. Put the butter in a large skillet and cook the tofu on medium heat until it is slightly crispy and brown.
  2. Arrange the potatoes on a plate and poke a few holes in each one. microwave for 5 min. peel and chop the potatoes.
  3. Add the potatoes,onions,and coconut milk to the skillet. Stir.
  4. Add the curry powder and salt to your taste.
  5. Cook until potatoes and onions are tender.
  6. Serve over rice (optional) and enjoy!
