  1. First make a simple syrup by heating sugar and 1 cup water over the stove until sugar is dissolved.
  2. Pour simple syrup into a large pitcher and add mint leaves to steep.
  3. Add lemon juice.
  4. In a blender, liquify blueberries and ginger (if using frozen blueberries, you may need to add a little water to get everything moving).
  5. Place a mesh strainer over your pitcher and pour in the blueberry juice. Some pulp will still get into your drink. If you don't want any pulp, place cheesecloth over your strainer before pouring the blueberries through.
  6. Remove mint leaves and fill pitcher with cold water.
  7. Add fresh mint leaves to serving glasses.
