  1. 1. Have all ingredients at room temperature (~70F)
  2. 2. Preheat the oven to 350. Prepare muffin tins with cupcake liners.
  3. 3. Whisk together flour, powder, and salt.
  4. 4. In a separate bowl, combine sugar, butter, and lemon zest. Beat in the eggs and banana.
  5. 5. Add the dry ingredients in three parts. Fold in the beets and chocolate chips.
  6. 6. Spoon the batter into muffins.
  7. 7. Bake at 350F for 30-40m, or until a toothpick inserted comes out clean.
  8. 8. Cool and enjoy!
