Spicy Italian Meat Sauce a la Anye

"This is a slightly spicy, richly flavored, tomato-based meat sauce for spaghetti that I derived from a non-spicy ground-beef based meat sauce my mother makes. It doesn't have as much heat as an arrabiata but has more kick than your average bolognese. You can easily modify the heat level by modifying the pepper content. I include alternative crock pot cooking instructions in the notes"

  1. Brown sausage and onions in the olive oil in a large sauce pot over medium to medium high heat until sausage is no longer pink.
  2. Add garlic, tomatoes/sauce, and tomato paste. Fill the tomato paste can with water and scrape out as much of the sticky paste as possible before dumping the water in the pot.
  3. Add oregano, sugar, salt, pepper, and cheyenne peppers
  4. Set heat to low and simmer, covered, for at least 3 hrs, stirring occasionally.
  5. Serve over cooked spaghetti noodles with parmesan or romano. This would also be great in a lasagna.
