"It took me a while to get it right, but this just hits the spot when you want something soothing. It's hearty as a soup, can be thickened to make a stew, or strained to make a side dish. It's creamy, smokey, ever-so-slightly bitter, and goes with chicken, pork, fish, and beef."

  1. 1) Heat olive oil in sauce pan over medium-high heat
  2. 2) Add onions and sweat until transluscent stirring occasionally
  3. 3) Add bacon and stir until bacon becomes soft
  4. 4) Add garlic and reduce heat to medium for five minutes
  5. 5) Stir in undrained navy beans stirring occasionally until a low simmer forms and reduce heat to low
  6. 6) Combine spinach until evenly coated with ingredients and cover pan
  7. 7) Simmer on low heat stirring occasionally for one hour.
  8. 8) Squeeze in lemon juice and stir
