"We love the taste of the lamb and beef versions of the Greek gyro sandwich, but we wanted something quicker and lighter. Paired with a delicious Greek salad and watermelon, even our pickiest eaters gobbled these sandwiches up and came back for seconds!"
Chill chopped vegetables -- tomato, onion and cucumber -- until ready to serve.
Slice chicken tenders into finger-sized slices.
Mix herbs with garlic powder. Dredge chicken in herbs and garlic mixture.
Saute in hot pan with olive oil until browned and heated through. Set aside and keep warm.
Slice Pita rounds in half. Warm them for about 10 seconds in the microwave.
Split Pitas and fill with warm chicken and chilled vegetables. Drizzle generously with chilled Tzatziki sauce (see directions below).
For Tzatziki sauce:
Blend yogurt, oil, shredded cucumber, garlic, lemon juice and salt until smooth. Season to taste.
Use water to thin it to the consistency of a thick salad dressing. It should be thin enough to drizzle from a spoon but still be thick enough that it settles on top of meat and vegetables in the pita and doesn't become runny and settle in the bottom of the pocket. Chill before serving.
