Preheat oven to 350 degrees ferenheit. Lightly spray an 8-inch baking pan with vegetable oil spray. set aside.
Heat a medium skillet over medium heat. Cook the apples and apple juice for 4-5 minutes until the apples are tender-crisp, stiring occasionally.
Stir in the honey and cinnamon. Cook 1-2 minutes until the cinnamon is distributed evenly and mixture is warmed through.
Put apple mixture into the pepared pan and let it cool for about 5 minutes.
In a medium bowl, stir together flour, sugar, and baking powder. Make a well in the center and add the milk, applesauce, egg, canola oil to the well, stiring until the flour mixture is moistened. Do NOT overmix.
In a small bowl, stir together the remaining ingredients with a fork, sprinkle over the coffee cake.
Bake 25-30 minutes until an inserted toothpick comes out clean.
Let it cool for about 15 minutes before cutting into squares and serving
