  1. Preheat oven to 400° F.
  2. Brown the ground beef in a large cast iron frying pan with the onions and leeks. Drain the oil and add the 2 cups of beef broth and the red wine. Bring to a simmer and allow to reduce down to a light gravy over a slow stove. Add all of the frozen vegetables, salt, thyme and rosemary. Add pepper to taste. Simmer that down until the liquid is almost gone then turn off the heat. If you are using a cast iron frying pan cover the top of the mixture with an even layer of mashed potatoes. If not, remove the mixture to a glass baking pan that’s large enough and then cover with mashed potatoes.
  3. Place frying pan or otherware in the oven at 400°F. Bake for 45 minutes then remove from oven and add cheese over top of potatoes if using. Return to oven and bake until the cheese is melted and bubbly. Serve immediately.
  4. It is important when simmering down the ground beef and vegetable that you get it down so that there is just a little liquid, but not dry. Too much liquid will make your pie sloppy. The mixture should be more than wet but not soupy.

Hey Kellie Ann, I don't like red wine either, to drink. But cooking with it is another story.

Eventhough I omitted the red wine (not a fan) this was pretty good. I also used a little less leeks since my husband isn't a fan and I wanted to sneek them in under his radar. I think next time...
