  1. combine all ingredients save the orzo, water, and feta into a roasting pan, making sure the lamb is pretty well coated. Cover with tin foil.
  2. Place in the oven at 325F for about 3 hours (30 min per pound)
  3. Take out of the oven and remove the tin foil
  4. Add the water and orzo directly to the pan.
  5. Put back in the oven for 15-30min or until the pasta is cooked and very little liquid remains. The water temperature determines the time it takes.
  6. remove from oven and add the feta cheese. Mix until melted and combined.
