  1. Preheat oven to 350.
  2. Grease (not spray, this bread is sticky) 2 loaf pans.
  3. Beat sugar with cream cheese.
  4. Add eggs one at time, beating between each egg.
  5. Add oil. Beat until fluffy.
  6. Combine with purees and sliced rhubarb and strawberries. Stir gently to combine.
  7. In another bowl, whisk together dry ingredients.
  8. Add dry ingredients to the fruit mixture along with the optional nuts and vanilla. Stir to combine thoroughly.
  9. Pour into prepared pans.
  10. Bake 50-60 minutes, or until toothpick comes out clean.
  11. Let cool completely before slicing to help prevent crumbling.
