  1. Mix ingredients for sauce and set aside. Cook noodles in a medium pot with enough water to barelely cover noodles. Drain and rinse with cold water.
  2. Heat a large skillet or wok with a small amount of oil. Add shrimp and cook for two minutes. Add onion, broccoli, and mushrooms. When veggies are still a little crunchy, add garlic to pan.
  3. Push everything in the pan to the side and add two eggs, scrambling lightly. Let them firm into an omelet and then mix with everything.
  4. Add noodles to the pan and then the sauce mixture. Mix well, cooking for two more minutes and then transfer to a bowl.
