  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Combine the sliced peaches with the brown sugar and cinnamon. Coat the peaches well.
  3. Combine the eggs, flour, milk, vanilla extract, and pinch of salt and ground nutmeg. (The batter should be well-combined but can be a little lumpy.)
  4. Heat a cast iron skillet and melt the butter. Add the egg mixture. Tilt the skillet to cover the bottom. DO NOT STIR. Add the peach mixture to the top and bake for 20 minutes or until done.
  5. Serve with or without vanilla yogurt.
