Pasta with Chicken and Vegetables

"I've been working on a recipe so I could believe I was having spaghetti without really having a lot of spaghetti. This recipe is the results of wanting pasta, but not really allowed to have pasta. Whole wheat pasta with sauteed veggies and pre-cooked chicken in a wonderful sauce and it will make you think you've just dined on a big plate of spaghetti."

  1. While you are parparing the veggies, cook pasta in boiling water, salted or not, until almost done.
  2. Cutting up Veggies***
  3. Cut zucchini and yellow squash in half lengthwise then into 1/2 inch thick slices.
  4. Slice onion in half lengthwise then slice into slices going across.
  5. Slice bell peppers into pieces about 1/4x1 inch pieces.
  6. Slice mushrooms, if you are using them, into 1/4 inch slices.
  7. Dice tomatoes, peeled and seeded if you would like. You could substitute 1/2 can of large diced tomatoes.
  8. Spray large not stick skillet and add the oil.
  9. Add the garlic and cook and stir for 1 minute.
  10. Add vegetables, broth, and seasonings to garlic and cook until veggies are tender crisp.
  11. Add drained pasta and chicken to skillet.
  12. Cook on low until chicken and pasta are hot.
  13. Serve with a sprinkle of Parmasean Cheese,
