  1. Cook the onion in the oil for about 3 minutes.
  2. Stir in the curry powder and cook another minute.
  3. In a food processor or blender, blend the cooked onion, paste, milk and stock and blend until smooth.
  4. Pour mixture back into the skillet and bring to a simmer.
  5. Add the shrimp and spinach and cover. Cook for 5 minutes until shrimp are done.
