  1. Mix everything in a food processor or blender. Check the consistency. If it still very wet, add more panko just until you get a mixture that is moist but will hold its shape.
  2. Roll the mix into balls about the size of a golf ball and then squish them down into little patties.
  3. Coat in panko.
  4. Heat about an inch of olive oil in your skillet on medium heat. Pan-fry falafel until crispy, about 3 minutes each side.
  5. Serve with your favorite sauce! I served mine with spicy mayo, made by mixing 3 tbs mayo with 1/2 tbs sriracha. It would also be great with tzatziki or spicy mustard.
