  1. Preheat oven to 350 degrees.
  2. In a large pan saute olive oil, garlic, onion, mushrooms, and red bell pepper until tender.
  3. Add salsa, tomatoes, black beans, and spices to simmer 5 minutes, stirring occasionally.
  4. Add spinach leaf, cover and simmer until spinach is bright green.
  5. Place cubed squash into casserole baking dish.
  6. Cover squash with sauteed mixture.
  7. Cover mixture with crushed saltines.
  8. Bake 350 for 35-40 minutes or until saltines are browned.
  9. Add cheddar cheese to taste (optional)
