  1. Preheat oven to 375F.
  2. Beat one of the egg whites at high speed until firm white peaks are formed. Reserve.
  3. In a large bow, mix the oil with the eggs and the vanilla extract. Mix very well.
  4. Incorporate all other ingredients slowly, keep beating in low-medium speed. After the last ingredient is added, beat for 5 more minutes at high speed.
  5. Gently fold in the batter the beaten egg white.
  6. Use a rectangular sheet cake pan(not too shallow, 9 X 12 X 2 approx.). Bake for about 40 minutes @375F or until slightly golden brown outside and if you stick toothpick it comes clean).
  7. FROSTINGS (2 options - choose 1)
  8. Option I.: Melt chocolate squares in very low heat (or in a water bath) stirring well. When it's almost completely melted, incorporate the heavy cream slowly, whisking.
  9. Option II.: Melt the chocolate slowly in a water bath after the cake is ready. Add it immediately to the top of the cold cake. The chocolate will get harder almost instantly.
