  1. Preheat the oven to 250 degrees F.
  2. Cut two 3/4" steaks from the center of a head of cauliflower.
  3. Sprinkle with salt.
  4. In a skillet, heat up the extra-virgin olive oil over medium-high heat.
  5. Add the cauliflower steaks and cook on both sides with salt and pepper.
  6. I pressed my down with a spatula to make sure I got the nicely browned florettes.
  7. Remove from heat and place on a baking sheet.
  8. Top with grated Parmesan and bake for 6 minutes.
  9. Finish under the grill until cheese is bubbling. Serves 2.
