  1. Rinse chicken and pat dry.
  2. Coat with butter and put in a crock pot, then cook on high for 4-5 hours, then take a metal spatula and chop and shred chicken into chunks.
  3. Melt cream cheese in a small sauce pan with sherry and soup.
  4. Add to chopped chicken, stir and heat for another 30 mins.
  5. Serve over pasta. Pass Parmesan cheese, if desired.
