"A leftover baked potato makes a wonderful scrambled entree for breakfast or anytime. Leftover veggies too such as broccoli or spinach can be used in place of the green pepper. Easy, economical and versatile."

  1. Heat Olive Oil on medium heat and add Potato, Onion and Green Pepper.
  2. Cook about 10 - 15 minutes until Onion and Green Pepper are soft and Potato is heated through and starting to brown.
  3. Add Salt and Pepper.
  4. Add Egg and Parmesan Cheese.
  5. Flip with rubber spatula to mix and scramble mixture for about 3 - 5 minutes until egg is cooked through.
  6. Top with an extra sprinkle of Parmesan Cheese or your favorite topping for eggs.
