  1. Brine:
  2. In a gallon container, mix all brine ingredients and allow to cool to room temp.
  3. Submerge chicken and cover, and set in refrigerator for at least 12 hours up to 24 hours.
  4. Chicken:
  5. Preheat oven to 350 degrees
  6. Remove chicken from brine, rinse off, and pat dry with a towel
  7. Soften 4 tbl of the butter and mix with olive oil, lemon juice, and seasonings. add more butter or oil if needed
  8. Rub butter mixture over the chicken and inside the cavity
  9. Stuff onion, celery, and 4 tbl of butter into the cavity
  10. Place chicken into a roasting pan covered with foil
  11. Place remaining butter, cut into 2 tbl squares, around the chicken
  12. Insert meat thermometer & place in oven.
  13. Baste with melted butter from pan ever 30-45 minutes. Bake until internal temp reached 180 degrees.
  14. Allow to rest 20 minutes before carving
