Cole Slaw with Apples and Raisins

"My husband never cared for cole slaw until I made this one. I was trying to come up with something that was a cole slaw but didn't taste like a regular cole slaw. It's a little sweet and a little creamy and Oh, so good."

  1. Cut head of cabbage in fourths. Cut core out and slice cabbage in VERY thin shreds. Do not chop the cabbage. You want shreds 2 or 3 inches long.
  2. Put the shredded cabbage into a large bowl.
  3. Core but do not peel apples and cut into half inch diced pieces and add to cabbage.
  4. Make sure each piece of apple has some peel.
  5. Add raisins, can use more or less depending on family likes and dislikes.
  6. Add the vinegar.
  7. Stir well to fully blend ingredients.
  8. Add 1/2 cup mayonnaise and 1/2 cup Cool Whip or 2/3 cup of mayonnaise only.
  9. If you are using nuts, add them now.
  10. Stir to blend all ingredients.
  11. The cole slaw should not hold together or be clumpy.
  12. Just add enough mayonnaise and Cool Whip to make the cole slaw a little creamy. Not milky, just creamy.
