  1. Mix the yeast with water and sugar according to package directions to "proof," after 10 minutes, mix all ingredients together except for the olive oil. Mix for 2 minutes on speed 1 on an electric mixer with the dough hook (Kitchenaid works great). After two minutes on speed "1," mix for 10 minutes on "2," add the olive while while it is mixing. After the dough is mixed, wet a cotton kitchen towel and cover the dough and put in a warm place to rise for 1 1/2 to 2 hours. After rising, form several dough balls about 2 inches in diameter and roll into strips. Braid the dough using 3 or 4 strips. If using 3 strips, braid like braiding hair; if using 4, braid with one strip under, one strip under, one strip over, etc. the other strips. Wash with egg wash and let rise again for 1 to 2 hours. Wash with egg a second time before baking, sprinkle with sesame seeds or poppy seeds, if desired. Bake in 350 degree oven for 30 minutes, or longer, until golden brown.
