  1. Place the sugar and water into a sauce pan and bring toa boil over medium heat.
  2. Stir the mixture to ensure all of the sugar is dissolved and remove the pot from the burner.
  3. Split the vanilla bean with the tip of paring knife, scrape the seeds and stir into the hot sugar-water mixture.
  4. Julienne the vanilla bean and add it tot he hot sugar-water mixture.
  5. Allow to steep and cool to room temperature.
  6. Transfer the vanilla syrup to a clean and sanitized container and refrigerate until needed.
  7. In a large bowl gently fold the pineapple with 1/2 cup of the vanilla syrup. Cover and allwo it to marinate for approximately 12 hours under refrigeration.
  8. Serce and enjoy.
