  1. Coat large non-stick frying or skillet pan generously with cooking spray. Add 2 Tbsp butter and melt over medium-high heat.
  2. Add veggies to pan and sauté over medium-high heat until at least cooked through. Add salt and pepper to taste.
  3. In the meantime, combine egg whites, water, sugar, salt and pepper in blender and blend on high until mixture at least triples in volume.
  4. Pour egg mixture into veggie skillet and turn heat down to medium heat.
  5. Stir pan mixture together gently and then let settle for roughly 3-5 minutes until edges are firm.
  6. Scrape up one side of eggs while tilting skillet to allow remaining liquid to drain to bottom of skillet for cooking. Repeat as needed until very little liquid egg whites remain.
  7. Sprinkle ½ cup of cheese over middle of omelette.
  8. Using large spatula, fold omelette in half while tilting skillet. Let weight of omelette fall onto itself.
  9. Re-center omelette in skillet.
  10. Turn on top oven broiler to high (make sure top rack is in one of top two positions).
  11. Sprinkle remaining ½ cup of cheese over top of omelette.
  12. Place skillet in oven for roughly 5-10 minutes until cheese on top is completely melted, preferably golden brown, and omelette is at desired temperature.
  13. Take out and let rest for at least 5-10 minutes.
