Frito Bars

Kari Shifflett

"These super simple, delicious treats are a salty sweet delight. They are also gluten free, great for anyone that needs to avoid gluten. Feel free to change the chocolate for butterscotch or white chocolate or a combination! Yum!"

  1. Spray a 9x13 brownie pan
  2. Sort of crunch up the corn chips while they're still in the bag, and spread them evenly over the bottom of the brownie pan.
  3. In a medium saucepan, bring the sugar and the corn syrup to a boil over medium heat, just so the sugar is dissolved, about 1 minute. Remove from heat and stir in the peanut butter until smooth. Pour over the corn chips in the pan.
  4. You could just sprinkle the chocolate chips over the top of the warm corn chips and peanut butter mixture, and let them melt, but I melt the chips in the microwave and pour the chocolate over the top.
  5. Cut into bars and wrap individually.
