  1. PREHEAT TO 475
  2. Toss leeks with the bacon and olive oil.
  3. Roast for 10 minutes.
  4. Add 1 tbsp thyme and white wine.
  5. Roast 10 minutes.
  6. Top with fish and 2 tbsp oil and roast until done, approximately 10 minutes (depending on thickness of filet, may be 2-3 minutes longer).
