Slow Cooker Sauerkraut Pork Loin

"My mother-in-law made a large batch of sauerkraut one summer and to use it up, we invented this (both out of hunger and necessity to use up all that sauerkraut!) It takes just seconds to throw in your slow cooker and you come home to a yummy dinner."

  1. Rub mustard into pork loin (this can be done the night before) until it is completely covered. Next, layer onions and apple on the bottom of your slow cooker. Place pork loin on top of the apple mixture, sprinkle with salt and pepper, if desired, and add chicken broth. Cover and cook on low for 6-8 hours.
