"Great for any weeknight dinner, this tilapia dish is quick, easy, and really adds some flavor and texture to a fairly bland (yet inexpensive and healthy) fish."

  1. With tilapia filets on a large plate, squeeze juice of HALF of the lime over both filets. Rub half of the minced garlic onto the filets. Sprinkle with salt and pepper.
  2. In a small bowl, combine corn meal, paprika, cumin, and cayenne. Sprinkle half of the mixture over the tilapia filets, and rub in.
  3. In a large skillet over medium high heat, melt butter. Add tilapia fliets, with the previously flavored side, down.
  4. While tilapia is cooking, dress/flavor the side facing up with the remaining lime half's juice, remaining garlic, and remaining corn meal mixture.
  5. After about 2 minutes of the tilapia cooking on one side, flip filets and cook for a remaining minute or two, until the fish is flakey but not falling apart.
  6. Serve with rice and beans, some seasonal veggies, and enjoy!
