Microwave Sweet Potato

  1. Wash the sweet potatoes well and prick several times with a fork.
  2. Place in microwave on top of a paper towel and cover with another paper towel.
  3. Set microwave for 5 minutes (may need more depending on strength of oven and thickness of potato).
  4. After five minutes, turn the potatoes over and cook for another five minutes.
  5. Remove potatoes and test for softness. If not soft, cook another minute or two.
  6. Wrap potatoes in aluminum foil and allow to cool for a minute or two.
  7. Slice them open and add butter, salt, cinnamon and honey/maple syrup, if using.
  8. Mash the soft flesh with a fork.
