  1. In a food processor, mix the mint, pine nuts, Parmesan and slowly integrate olive oil.
  2. Heat the wok and stir fry the chicken in the fat.
  3. Remove the chicken when done.
  4. Clean out the wok and add more fat and stir fry the onions, 3 to 4 minutes.
  5. Add the mushrooms and stir fry for another 2 minutes.
  6. Return the chicken to the wok and add the pesto.
  7. Mix until everything is hot, about 3 minutes.
