Chipotle Pineapple Ham

"Easter Ham with a chipotle/pineapple/bourbon mixture that's to die for! Dont want to take credit for it though, its a mixture of a couple recipes that I found."

  1. Score the skin of the ham in a diamond pattern (1" diamonds, 1/2" deep).
  2. Blend (in a blender) all ingredients except ham, cornstarch and water.
  3. Marinade ham in the blended mixture for several hours.
  4. Separate the marinade and start baking just the ham at 375, reserving the marinade.
  5. While the ham is baking, bring the marinade mixture to a boil in a saucepan.
  6. Mix the cornstarch with the water until dissolved, and then mix into the marinade; cook until thick.
  7. After the ham has baked 30 minutes, smother it with the glaze.
  8. Baste the ham every 30 minutes until heated through, the internal temp should be 140 degrees. Done!
